Claire’s Strawberry Pomegranate Gummies

Makes A LOT of heart gummies

You’ll need:

3/4 C unsweetened pomegranate juice

1/4 C freshly squeezed lemon juice

1 1/2 C frozen or fresh strawberries

1/4 C grass-fed gelatin (you don’t want the cold water soluble gelatin)

3 T raw honey

To make:

  1. Put pomegranate juice, lemon juice and strawberries in a blender and blend until smooth.

  2. Pour mixture into a saucepan over medium heat and let it get warm.

  3. Reduce heat to low and add gelatin, stirring constantly until it’s all incorporated.

  4. Remove from heat and stir in honey.

  5. Then quickly pour the mixture into a glass baking dish* or into silicon molds and refrigerate for at least an hour or until firm.

  6. Enjoy!  (These should keep in the fridge for a week…if they last that long!)

*If using a baking dish you can use cookie cutters to make shapes or just cut into bite-size squares.
