Apple Buckwheat Waffles

Makes 12 waffles

You’ll need:

2 eggs*, lightly beaten

1 red apple, grated with skin (reserve a few slices for garnish)

1 ½ C almond milk (or whole milk)

3 T coconut oil (or melted butter ;) ), plus more for cooking

1 C spelt or whole wheat flour

¼ C buckwheat flour

¼ C oats, (small flakes are best)

1 T ground flax seeds

½ t ground cinnamon

2 t baking powder

1 t baking soda

 

*Flax eggs work great here for a vegan option. Dissolve 1T of ground flax seeds in 2T of warm water for each egg.

To make:

  1. Mix all the wet ingredients (eggs, apple, milk, and oil) in a bowl

  2. Mix all the dry ingredients (everything after the oil) in a bowl or blender.

  3. If using a blender, blend until everything is incorporated and not lumpy, but be careful not to overmix. If hand-mixing, add the wet ingredients to the dry and mix well.

  4. In a skillet over medium heat, heat a bit of coconut oil/butter and pour about ¼ C of batter into the skillet. Cook for 3-4 minutes until bubbles appear in the batter and can be flipped with a spatula.

  5. RESIST the urge to flatten your pancake with your spatula!!! Just let it cook, let it grow, let it get golden and delicious.

  6. Enjoy!
