Fig and Barberry Granola

Makes 8C

 

You’ll need:

 

2 C large oat flakes

1 C buckwheat groats

1 C almonds, roughly chopped

2 T ground flax seeds

¼ C pumpkin seeds

¼ C hemp seeds

¼ C coconut oil

2 T extra virgin olive oil

¼ C + 2 T raw honey

½ t Himalayan salt

½ t ground cinnamon

⅛ t ground cardamom

½ C dried figs, finely chopped

½ C dried barberries

 

To make:

 

Preheat oven to 150℃/300℉

 

  1. Mix oat flakes, buckwheat groats, almonds, and all seeds together in a large bowl.

  2. In a small saucepan over low heat, melt and combine the oils, honey and salt. Once everything is combined and off the heat, add the spices.

  3. Pour the oil/honey mixture over the oat/groat mixture and stir to combine.

  4. Spread evenly onto parchment paper on a prepared baking sheet and bake for a total of 30 minutes (or until perfectly golden to your liking). Halfway through, stir the granola to make sure the edges and tops aren’t getting too crispy. You can add the dried fruit as you stir and let it bake for 15 more minutes or you could add dried fruit as the granola is cooling.

  5. Enjoy as a snack on its own or with yogurt and some fresh fruit or even with your favorite milk.
