Marathon Date Bars

Makes 20 bars

 

 

You’ll need:

 

  • 2 C pitted dates

  • 2 T coconut oil

  • 2 T nut butter (peanut or almond)

  • ¼ C sunflower seeds

  • ¼ C sesame seeds

  • ¼ C pumpkin seeds

  • 2 T hemp seeds

  • ¼ -½ C shredded coconut

  • ½ C corn flakes

  • 3 T chocolate chips or chopped chocolate (optional)

 

 

To make:

 

  1. Place dates and coconut oil in a food processor and process until a thick paste is formed.

  2. Slowly add the rest of the ingredients, one by one, and process each until well combined.

  3. When everything is combined, place paste in a glass baking dish lined with parchment paper. Press the paste in evenly.

  4. Refrigerate for 2+ hours to set.

  5. With a knife that has been coated in coconut oil, slice the paste into squares of desired size.

  6. Enjoy!
